Quick Cinnamon Rolls

I woke up. Went to work. Got a headache. Went to the gym. Deadlifted. Ate some soup.

That was my Valentine's Day.

Don't send out any pity, though. Valentine's Day is seriously just another Tuesday for me. Mr. C and I already "celebrated" a week ago. With monster trucks. That's how romantic we are.

If you think about it, though, you really shouldn't need a designated day to love or be loved. You should feel like that everyday. Eat chocolates, snuggle, go out to a lovely dinner. Whenever you'd like. Crazy, eh?

Baking is one of the ways I show Mr. C that I'm fond of him. Taking some time to whip up something sweet always makes him smile. Today I want to share with you one of his favourite little treats. They leave you with a warm feeling inside. Their smell really lights up a room. And they're so flippin' easy.

So, for those of you who go all out on Valentine's Day, I hoped you enjoyed your twenty-four hours. For the rest of you, here's wishing you a wonderful 365 days of lovin'. And monster trucks.

Quick Cinnamon Rolls
Makes 8 rolls

1/2 cup sugar
1/2 tsp ground cinnamon
pinch each cloves, nutmeg and allspice
1 3/4 cups flour
1 3/4 tsp baking powder
1/2 cup raisins
1/2 cup whipping cream
1/2 cup milk
2 Tbsp butter (melted for brushing)

1) Preheat oven to 350F. Combine the sugar, cinnamon, cloves, nutmeg and allspice and set aside.

2) Place the flour, baking powder and raisins in a bowl and stir to combine. Make a well in the center and gradually add the cream and milk, stirring, until a soft dough forms.

3) Plop dough onto a floured surface and knead until smooth. Roll out to 12" x 15". Brush with butter and sprinkle with the sugar mixture (reserving 1 Tablespoon of it for later). Roll up the dough and slice into eight pieces. Place the dough into a muffin tin lined with parchment paper or a cupcake liner. Brush with butter and sprinkle with the reserved sugar. Bake for 25 minutes or until golden.

I love cinnamon rolls, but looks like I will be enjoying them more often with this quick go to recipe. They do look tasty. Also, perfect for the non host that loves to tell everyone the kitchen is closed-yes there is one in the family!
Glad to know the calendar is not running your life when it comes to celebrating. Have a happy today as well as tommorow!

These look so good. I'm seriously craving cinnamon right now...so I might have to go home and make a batch. Thank you for sharing. I'm sorry I have been absent. I've been driving to and from Houston which has cut back on my blogging time. I hope you are having a great start to your week!
