Pineapple Gem Muffins

Let's talk jewelry.

I'm pretty sure a large percentage of you (probably the percentage with boobs) have been eyeing something sparkly this month. Perhaps a couple of hints have been dropped to your better half. Or perhaps you've just outright blurted that you will be requiring a big ol' diamond for Valentine's Day. But let's settle down for a moment and take a look at this situation from a scientific point of view:

You are getting excited over a tiny piece of carbon. A sparkly piece of carbon, yes, but carbon never the less. You know what else has the same chemical makeup as a diamond? Graphite. So why don't you get overly excited at the thought of wearing some big pencils around your ears? Well, diamonds are sparkly, of course.

So is tin foil.

The point, my friends, is to perhaps think of something more useful for your beau purchase for you (at the last moment). You know, like tickets to Monster Trucks. Or that new tire iron you've had your eye on. Or a chunk of graphite you've had your eye on.

If I haven't convinced to yet to shed the need to have something shiny for Valentine's Day, here is a big batch of gems you can create yourself.

Pineapple Gem Muffins
Makes about 15 muffins

1/2 cup butter  (soft)
2/3 cup sugar
1 egg
2 cups AP flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoons cinnamon
1/4 teaspoons nutmeg
1 cup canned crushed pineapple with the juice
1/2 cup shredded coconut (unsweetened)
1/3 cup dark chocolate chips

1) Preheat oven to 350 degrees. With your mixer, cream butter and sugar until light and fluffy. Add your egg and mix some more.

2) Sift your dry ingredients together - the flour, baking powder, baking soda, salt, cinnamon, nutmeg. Pour in your butter mixture and use a wooden spoon to distribute everything. Add the crushed pineapple and continue stirring until your batter has just come together. Add your coconut and chocolate chips and give it a couple more stirs so everything is evenly distributed.

3) Spoon about three tablespoons into each muffin liner. Bake for about 20 minutes, or until your cake tester comes out clean. Take out of pan and place on cooling tray. Enjoy.

No big flashy things for me! Really not into all that jewelry. However, I am definitely into these muffins! those last three ingredients does make me want to try these. Great blend of goodies in there! Your pictures do look tempting!

I don't get anything more flashy than tin foil this year! What really is the point? LOL! Tin foil is SO much more practical for a baker....LOVE the muffins. They sound delicious.

My husband is European and terrified of the whole Valentine's Day thing because he's afraid he will do something wrong. I told him I'll take care of planning the evening this year. These muffins look amazing!
