Nyan Cat Poptart Cookies

I'm going to admit something to you all. I'm actually a bit embarrassed about it. Here it goes:

Yes, I may have a tough exterior. I love monster trucks and hard alcohol and Stallone movies. I'd much rather play violent video games than go shopping for shoes. I don't think I owned a dress or a pair of heals before I met Mr. C (he made an honest lady out of me).

But, underneath all of that, I have a real soft spot in my heart for the fuzzy wuzzy. I will cross the street to go pet a dog. I have watched all episodes of the new My Little Pony. I could not go a day without check out this blog.

Oh woe is me.

I guess I wanted to come out and say all that before I present you with this next recipe. Because, if I hadn't, I'm sure you would have thought less of me. Or you still think less of me. Or you've always thought less of me.

Internet memes make me laugh, so sue me. But cute internet memes brings a big goofy grin to my face. What a goober, I know. Though I've got some serious favourites, nyan cat is always one that will stand out. Maybe because it's annoying and won't get out of my head. Or maybe because it's just so damn cute. Either way, it tastes smashing.

Nyan Cat Poptart Cookies
Recipe slightly adapted from Amy's Food Adventures

Makes about a dozen cookies

2 cups AP flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon baking soda
2/3 cup butter (softened)
1/4 cup + 2 Tablespoons cream cheese (room temperature)
1 cup sugar
1 egg
1/2 teaspoons fresh. lemon juice
lemon zest of one lemon
about a half cup of strawberry jam

1) In a medium bowl, whisk together your flour, baking powder, salt, and baking soda. Set aside.

2) With your electric mixer, whip together your softened butter and cream cheese until the two are light and fluffy. Add your sugar and continue to mix. When the sugar has been combined, add the egg. Continue mixing and add your lemon juice and zest.

3) When your wet ingredients have been completely combined, sift in your dry ingredients. Use a wooden spoon to incorporate your dry completely into your wet. Wrap your dough in plastic wrap and refrigerate for a minimum of an hour.

4) Preheat your oven to 350 degrees. Roll out your cooled dough to about a 1/8 of an inch thickness. We cut our cookies into rectangles, about 3 inches by 3.5 or 4 inches. Lay one piece of dough on your cookie tray and spread two teaspoons of jam on the top of it. Lay another piece of dough on top of this one and, using a fork, press together the edges so everything is sealed. Continue until all your dough is used. Bake in the oven until golden, about 10 to 12 minutes, then set out to cool.

5) For the nyan decorations, we used rainbow twizzlers and chocolate melts (white chocolate, dark chocolate, milk chocolate, and red). For the face, use the dark chocolate to outline the eyes, mouth, and nose. The cheeks are a mix of white chocolate and red melting wafers. The rest of the face is a mix of milk chocolate and white chocolate. For the frosting on top, you can use your favourite royal icing or a mix of white and red chocolate melts. Make sure to use a lot of sprinkles!
