So, the wedding was beautiful. You got to ride in a spiffy car. Your grandmother and grandfather stayed awake for the whole thing (I think). And, best of all, your brother didn't make a complete ass out of himself. But, a week later, the suit's packed away, the flowers are long gone, and that toaster from Fergie has been returned to the store. Which begs the question: Now what?
Every couple looks forward to a honeymoon - a chance to get away from it all and exist only as a married couple for a few weeks. People dream of jetting off to far away tropical locations or exotic cities. You could afford hundreds of trips like that. In fact, you could probably fly anywhere in the world when you feel the urge. But, where oh where do you choose to take your honeymoon?
The Great White North.
Now, there's nothing wrong with Canada. Hell, I live here, don't I? But, let's face it, if there was a "Honeymoon Vacation: spectrum, we'd be at the end with New Jersey and that McDonald's down the street. Yes, we do have some absolutely spectacular places, and I'm sure you'll enjoy those. But, going up north? Really? What are you going to do up there? Be uncomfortable in heavy jackets? Eat blubber? Does that really seem like such a good idea? Honestly, your bride is a bit too high maintenance for that sort of rubbish.
My suggestion? Stay home. Be love birds off in the country somewhere. And eat more of your grandmother's delicious delicious cake.
Prince William's Chocolate Biscuit Cupcakes
Makes about 8 cupcakes
20 arrowroot biscuits
8 oz bittersweet chocolate (chopped fine)
1 cup whipped cream
1/2 cup sugar
Extra whipped cream (about 250 mL) for topping
1) Crush biscuits into about 1cm pieces. Place in a large bowl and set aside. Place the chocolate pieces in a heatproof bowl. In a saucepan, combine the cream and sugar. Whisk while heating it on medium and slowly bring to boil. Take right off the stove top and pour over the chocolate. Whisk to make sure the chocolate is melted and well combined. When all the pieces have melted, pour about a cup and a half of the chocolate mixture over the chopped biscuits. Mix with a spoon, making sure that the biscuits are well covered. Scoop into cupcake liners and spoon some of the extra chocolate over to smooth (leave some of the extra chocolate for drizzling later). Put the cupcakes in the fridge to set for about an hour or so.
2) When the cupcakes are set, whip up the extra whipped cream and spoon on top. Drizzle with the extra chocolate. Enjoy.

Well done, I must confess I spent 6 hours watching the wedding last Friday and wrote a post about it myself. Anyway, pleasure to tell you hi and send you a kiss from Spain.....he could spend a good time in here too.
