Thanks for watching our blog!<br /><br />The cream is used in the recipe to make the frosting a bit more pliable - the heavy the fat content, the heavier the frosting. 40% heavy cream will give you a thicker frosting that will hold up, but if you use whipping cream (which is usually around 32%) you probably could not tell much of a difference since the percentage is so close. I actually experimented a bit and used skim milk - the frosting, again, came out fine, just a little runny when it sat out of the fridge for a while. <br /><br />Let me know how everything comes out!
